🍌 What You’ll Need:

  • 1 ripe banana

  • 60 ml of plant-based milk (like soy, almond, or oat)

  • 100 g flour (all-purpose or whole wheat)

  • 20 g sugar or fructose

  • 1 tsp baking powder (or a mix of baking soda + cream of tartar)

  • Optional: 1 tsp cinnamon

  • A little oil for the pan

🐌 How to Make Them:

  1. Mash the banana in a bowl until smooth.

  2. Add the plant milk and mix well.

  3. In another bowl, combine the dry ingredients: flour, sugar, baking powder, and cinnamon if using.

  4. Pour the banana mix into the dry mix. Stir until you get a smooth batter.

  5. Heat a non-stick pan and lightly oil it.

  6. Scoop 2 tbsp of batter per pancake into the pan. Cook until bubbles form, then flip. Each side needs about 2 minutes.
